WHERE DID WAGYU COME FROM AND WHY ARE THEY SO SPECIAL? Before they were raised for meat. Wagyu were used in Japan hundreds of years ago as draft work animals. The selection process that was used to produce cattle marked strength and endurance led to animals with high IMF (intramuscular fat) content. IMF describes marbling which supports strength and endurance as a fuel source in the animal. The IMF content is far superior in a Wagyu steer which means that a consistently superior eating experience can be achieved with any and all muscles of the animal. Wagyu beef is so tender, with such a sweet, slightly nutty and intensely beefy flavor, that a first taste turns a beef lover into a Wagyu fanatic. Wagyu beef truly is the pinnacle of beef enjoyment!

WHY DOES WAGYU’S HIGH IMF LEAD TO HEALTHIER BEEF? The IMF in Wagyu is higher in desirable Omega rich fats (monounsaturated) than in other breeds of beef. The ration of monounsaturated fats to saturated fats can be up to three times (3X) in Wagyu than in other beef. Wagyu are also higher in a type of fatty acid called CLA (conjugated li Oleic acid) which is believed to have anti-carcinogenic properties as well as an anti inflammatory agent.

WHAT ARE THE DIFFERENT VARIETIES OF WAGYU? Wagyu meat comes from Fullblood and Percentage or Cross Bred cattle, such as Angus-Wagyu which is abundant in the United States. Fullblood develop the highest IMF, are usually smaller in stance and slower growing. The cross breed of Wagyu and Angus develop larger cattle, quicker with significant IMF often preferred by the American leaner palate.

WHERE DOES WAGYU FIT INTO THE U.S. BEEF GRADING SYSTEM? The U.S. beef grading system is predominantly Select (lowest), Choice (Common) and Prime(Prime Plus). Fullblood Wagyu and Wagyu-Angus cross breeds consistently grade above Prime Plus, often considerably higher.
